Ah, Fall. How I love the wonderful weather, the beautiful colors, and...all that pumpkin. As some of you may have noticed, I'm slightly addicted to/obsessed with any foods involving pumpkin. If it contains pumpkin, pumpkin spice, or the name has the word pumpkin in it, I'm all over it. Unfortunately, with this addiction comes temptation. I'm a huge fan of Pinterest, and this time of year, every other item on the food and drink page AND holiday and events page has something to do with pumpkin. And I want to make and eat it all. Every single recipe. BUT... I can't bake cupcakes, bread, muffins, lattes, etc. every single day. I have found several items to help satisfy my pumpkin tooth. I'm sure I've shared most of these before, but I thought it would be nice to have them all in the same place :)
The most common form of pumpkin I consume is smoothie/ice cream. No, not real ice cream. I make the smoothie, freeze it, thaw a bit, and eat like ice cream.
Pumpkin Pie Ice Cream
Serves: 1
Calories: 130
-1/2 cup Libby's canned pumpkin puree
-1/2 cup Silk Original Unsweetened Almond Milk
-1/2 cup Stonyfield Farms Plain Non-Fat Yogurt
-sweetener
-1 tsp cinnamon (you can add more if you like it spicier)
-1 tsp pumpkin pie spice (same as cinnamon)
-Combine all ingredients in blender. Pour into bowl, place in freezer. Let freeze at least 3-4 hours.
-If you let it thaw a bit to the point that it begins to liquify a little, it's creamier when you kind of stir it all up a little bit and becomes more ice cream-like.
Pumpkin Pie Oatmeal - This is spectacular and super filling!
Serves: 1
Calories: 350
-3/4 cup uncooked plain oats
-1/4 cup Silk Original Unsweetened Almond Milk
-1/4 water
-2 tbsp "I Can't Believe It's Not Butter!" (squirt bottle kind, like always)
-2 tbsp Libby's canned pumpkin puree
-1 tbsp chopped walnuts (optional, but absolutely delicious with them in it! If you choose to omit, you can reduce 50 calories from total)
-1 tbsp brown sugar
-cinnamon and pumpkin pie spice to taste
-sweetener to taste
-In a bowl, combine oats, silk, and water. Microwave until oats have soaked up all the liquid. Add more water if needed.
-Add "Butter!", pumpkin stir til well combined.
-Add remaining ingredients and stir well.
-Eat and be amazed with how amazing it is :)
Pumpkin Pie Pancakes- One of my all time favorite foods :)
Serves: 1
Calories: 330 (350 if you also use Smucker's Sugar-Free Breakfast syrup which is 20 calories for an entire 1/4 cup! And its delicious!)
-1/4 cup
Silk Original Unsweetened Almond Milk
-1/2 cup flour
-6 tbsp Egg Beaters or Egg whites
-1/2 tsp vanilla extract
-1/2 tsp baking soda
-1/4 tsp pumpkin spice
-1/2 cup Libby's canned pumpkin puree
-sweetener to taste
-1 dash salt
-Combine all the wet ingredients in one bowl, combine all dry ingredients in another.
-Combine the 2 mixtures, pour 1/4 cup of batter into pan over medium heat. Cook like regular pancakes.
-Makes 5 medium sized pancakes.
-I spray mine with "I Can't Believe It's Not Butter!" and then pour the syrup over. Absolutely amazing!!!
Pumpkin Spice Latte - Super tasty, about 1/4 of calories of Starbucks non-fat.
Serves: 1
Calories: 50
-1/2 cup strongly brewed coffee
-1 cup Silk Original Unsweetened Almond Milk
-1 tbsp Libby's canned pumpkin puree
-1 tbsp vanilla extract
-cinnamon, pumpkin pie spice, sweetener all to taste
-In a small pot, combine silk, pumpkin, and sweetener. Bring to a boil over medium heat while stirring. Once brought to boil, reduce heat and add vanilla. Stir until well combined. Should be steamed.
-Pour mixture into blender, add spices and blend for about 10 seconds until foamy, or you can whisk by hand.
-In a mug, combine the mixture and coffee, stir and enjoy!
There you have it, my favorite recipes at the moment. I may be obsessed, but I don't care. I love it and it's really good for you! I hope you enjoy these as much I do :)
